Magget, I was queasy just reviewing the photos of the thong-in-a-Margarita-glass! LOL!

Sure man, this is from memory, so please bear with me I kind of read some recipes, then made the following up...

2.5 lbs bottom round roast, cut into .5 inch cubes
.5 lb hot italian sausage, cut into chunks

Brown beef in small batches, do not overcrowd pan. In same pan brown sausage until done, remove, keep fat. Dice 1 sweet onion, cook in fat over medium high heat, add to pot. Take one dark beer (I used 1/2 cup of white wine since I didnt have any beer left!) pour into pan where meat / onion was, scrape all brown tasty bits off the bottom, add to chili pot.
Put one red and one orange bell pepper under broiler in oven until blackened. Turn over and repeat until blackened on other side. Remove skin and seeds, and dice roasted peppers, add to pot.
One large can (28 oz?) whole tomatoes in juice. Strain juice into bowl. Cut open tomatoes, throw seeds away, strain into bowl. Throw whole tomatoes, drained and deseeded, into pot.
Add tomato juice, along with 2 dried ancho chiles and 2 dried cascabel chiles (bought dried at Krogers, pretty cheap), deseeded and ribboned, 2 TBSP chili powder and 2 tsp oregano to juice. Cook juice mixture in separate pot over medium low heat for about 20 minutes, until liquid is reduced by half. Add reduced liquid to chili pot.
De-seed and dice 1 or more habanero peppers, add to chili pot. Add 1/2 of a small can of diced green chiles to pot.
Add one 8oz can of tomato paste and 2 TBSP dark brown sugar to pot (I did this to cut the acidity a little). Add another 2-3 ancho chiles and another 1-2 cascabel chiles, deseeded and ribboned, to the pot.
Add enough chicken stock to cover (about 3-4 cups, or more or less to taste). Cook over simmer for 2+ hours, stirring occasionally.
At the end, just before serving, stir in a few squirts of your favorite pepper sauce... I think I used Cholula chili garlic paste (contains piquin peppers, bright and very hot).

Cry Beloved pet lost....

Please please if our neighbors lovely little female jack russell went home with you because you thought she was homeless...please let us know. They are despondent over the loss of this beloved animal. She is black headed , black tailed with white body and specks. VERY friendly would get in the car if you opened the door...she was wearing a flea coller held together with a black twist tie and had on a coller (purple we think) with rabies tags.
Please call the field if you have her...no questions asked. She is much missed. Please help. Call 931-433-9595
She went missing the Sunday the game ended...
