Cowher is gone because he wanted to be the highest paid coach in the NFL. His current salary was 4 MIL and he wanted 7-8 MIL. The Rooney's offered him 6 MIL and he walked.

I think Cowher will either be an analyst for a year or the new Dolphins head coach.
