As socoj2 said, since Church's bought them in a bit of Al Copeland bufoonery, Rocky and Carlos' is the only place in creation to sample Chalmette chicken in it's true form. Copeland is now selling spices and frozen etoufee under the Diversified Foods label. I don't know how it tastes in it's final defrosted form, but I drive past the mini-factory off I-12 in Goodbee on the way to the shop every day and it smells like (get ready for almost sacrilege, but it's true) Justin Wilson is hanging on the back porch cookin' dem up, Cher'. Too bad Al couldn't hang on to "Love that chicken..."

I WILL be at Bear Claw, I'm just not sure at this time which ones. My first job has me in Maryland, then I head to Michigan, mid-March, before I get back to So-Car in mid-April.

If nothing else, I'll plan an over-night in the Quarter, on the drive to D-Day Okie.
