Not sure why I didn't think of it before, but check your Ball Latch (more commonly called a detente or nubbin) Item FA-18 on the schematic. Make sure it's extending into the breach and that when a single ball is fed, it is held in place against the 02-17 Front Bolt. You can experiment with this by taking off the barrel, leaving the gun ungassed and manually pushing one ball at a time into the cyclone then into the breach. If the ball is advancing past the detente it will produce result similar to what you describe, including the varied velocity, lots of chopped paint, and super poor accuracy.
I should mention that the A-5 is an Open Bolt paintball gun. That means that when the gun is cocked and ready to fire, the breach (the place where the round rests before being fired) is open to the feed. You have to cock the marker before loading the paintball. Then pulling the trigger will push the paintball out of the marker. In normal operation on an A-5 the front bolt will push the ball forward slightly before the air hits the ball, this little nudge increases deformation of the ball and (so say the paintball theorists) decreases accuracy. If the ball is resting a little forward of the front bolt, the bolt will HIT the ball leading to more deformation and possible breaks. If the ball is FAR ahead of the front bolt a second ball will partially enter the chamber, and the front bolt will clip this ball as it goes past, leading to a "chopped ball". Suddenly the breach and barrel are full of paint and shell and everyone knows, that's bad stuff. Now you can't shoot straight, your velocity flies all over, and you break MORE paint as the goo on the detente prevents new paintballs from loading properly-- especially in a barrel like the flatline that does NOT self-clean at all AND in a marker like the A-5 where chopped balls leave goo all over the cyclone feed and the breach.
So anyway, clean the gun, (right down to removing the cyclone and cleaning it thoroughly) and make sure the detente is holding the balls in place and doesn't have paint or shell in/under it. Normally you will only have to remove and clean the cyclone when you've had a bad break in the breach or a broken ball in your hopper.
